Who doesn't love ice cream? This is a delicacy that is difficult to refuse. But in stores it is becoming more and more difficult to find really tasty ice cream without harmful additives.   • - 400 ml of cream (200 ml of 20 percent and 200 ml of 33 percent),
  • - 70 grams of sugar
  • - 4 egg yolks,
  • - 1 tbsp. a spoonful of brandy,
  • - 1, 5 vanilla (half a stick).

Instructions

Step 1

For cooking, you need a saucepan with thick walls. Pour cream into a saucepan and put on fire. Cut the vanilla stick into two parts, remove the seeds from one part and put it over the cream. You can leave the second part of the stick in a closed jar. You can use vanilla sugar if you like.

Step 2

Heat the cream almost to a boil, the main thing is not to thicken. While the cream pan is heating, beat 4 egg yolks with sugar. You should have a light and fluffy mass.

Step 3

Pour the warmed cream into the whipped yolks as gently as possible. Pour in slowly with constant whisk. Do not whisk too much.

Step 4

Gently pour the resulting mixture into a saucepan over low heat. With constant stirring, bring the buttercream until thick. While stirring, make sure that the mass does not boil (when boiling, the yolks curl up). When heated, the cream will not thicken much, it will simply become denser.

Step 5

After the buttercream is brewed, remove the pan from the heat, stir for another 2-3 minutes to cool slightly. Add some cognac, rum or tincture to the cream.

Step 6

Transfer the cream to the containers and place them in the freezer for six hours. Half an hour later, after removing the cream, take it out and stir actively with a mixer. You do not need to stir for a long time, the cream should not heat up. Then put the cream back in the freezer and after half an hour mix again with a mixer. After half an hour, repeat. After about an hour, stir again with a mixer. During the entire process of making ice cream, the cream must be mixed 5-6 times.

Step 7

Before serving ice cream, transfer it to the refrigerator for 15 minutes to soften a little.
