Beetroot based on kefir is an excellent alternative to the usual okroshka. This light, vitamin-rich soup is ideal for a hot summer lunch as it perfectly refreshes and quenches thirst.
Beetroot on kefir: a recipe
Required Ingredients:
- 2 beets;
- 2 potatoes;
- 3 fresh cucumbers;
- 1 bunch of dill;
- 2 chicken eggs;
- 100 g green onions;
- 1.5 liters of kefir;
- sugar;
- salt.
Wash the beets and potatoes, boil in a peel, cool and peel.
If you are using new potatoes, then you do not need to peel them: the potato peel contains a large amount of nutrients.
Hard boil the eggs, peel and cut into small cubes. Grate beets on a coarse grater. Cut the potatoes into small cubes. Wash cucumbers, peel and chop finely. Rinse the dill and green onions thoroughly in running water and chop. Put all the ingredients in a bowl, salt, add a little granulated sugar (optional), pour in kefir and mix well.

- 4 potatoes;
- 250 g of boiled chicken fillet;
- 4 chicken eggs;
- 2-3 fresh cucumbers;
- green onions;
- parsley and dill;
- 1.5 liters of mineral water;
- 1.5 liters of kefir;
- salt.
Wash potatoes and beets, boil in a peel and let cool. Then peel and cut into small cubes. Hard-boiled eggs, peel and chop. Grate cucumbers on a coarse grater. Cut the boiled chicken into thin strips.
Those who prefer savory dishes can try replacing the chicken meat with ham or balyk.
Combine all the ingredients in one bowl, add salt and add kefir. Let it brew for 10-15 minutes and dilute with chilled mineral water. Pour the finished beetroot into plates, add chopped herbs to taste and serve.
Spicy beetroot on kefir with radish: a recipe
Required Ingredients:
- 2 beets;
- 1 bunch of radish;
- 3 potatoes;
- 3 cucumbers;
- 2 cloves of garlic;
- ½ teaspoon of grated horseradish;
- 150 g of boiled beef;
- 1.5 liters of kefir;
- greens;
- salt.
Peel and dice the boiled beets and potatoes. Wash radishes and cucumbers and grate on a coarse grater. Cut the boiled beef into thin strips (like noodles). Combine all the ingredients in a large bowl, add crushed garlic, grated horseradish (the amount of garlic and horseradish may increase or decrease depending on the tastes of the eaters) and chopped herbs. Season with salt, add kefir and stir.
