This delicious and spicy puree soup can be taken by all vegetarians. Indeed, instead of chicken broth, you can take vegetable broth, then the soup is also suitable for those who observe the fasts. You can take canned and fresh beans. Red and white beans are good for this soup.
It is necessary
- For six servings:
- - beans - 700 grams;
- - tomatoes in their own juice - 400 grams;
- - one onion, one carrot, a large stalk of celery;
- - three cloves of garlic;
- - chicken or vegetable broth - 1 liter;
- - one ripe avocado;
- - ground chili, ground cumin, salt, juice of half a lime.
Instructions
Step 1
Chop celery, carrots and onions into smaller pieces. Heat a spoonful of vegetable oil in a saucepan, put vegetables, fry for about four minutes. Add spices, chopped garlic, stir-fry for a minute.
Step 2
Add mashed tomatoes to the pan along with the juice, pour in the broth. Bring to a boil, salt, reduce heat, cook until vegetables are tender.
Step 3
Rinse the beans, add to the soup, heat for a couple of minutes, then remove from the stove. Use a blender to puree the ingredients in the soup.
Step 4
Peel the avocado, remove the pit. Chop the pulp finely, season with lime juice. Pour the resulting spicy bean puree soup into portioned bowls, add the avocado to each. Bon Appetit!
