- live yeast - 50 g;
- cardamom powder - 1/3 tsp;
- chicken egg yolks - 5 pcs.;
- pitted raisins - 200 g;
- candied fruits - 2 tablespoons;
- vanilla sugar - 10 g;
- zest of ½ lemon;
- salt - 1 tsp;
- sugar - 200 g;
- butter - 250 g;
- flour, premium wheat - 1 kg;
- almonds - 100 g;
- icing sugar - for sprinkling.
Instructions
Step 1
Take up the preparation of the dough. Dissolve yeast and a teaspoon of sugar in warm milk. Sift flour, add half to milk, mix everything well. Place the prepared dough in a warm place, do not forget to cover it. The batter should rise in 20 minutes.
Step 2
Rinse raisins and candied fruits, cover with water and leave for 15 minutes. Then drain the water, dry the dried fruits and sprinkle with flour.
Step 3
In a separate deep bowl, combine 4 yolks, vanillin, sugar and salt. Using a whisk, beat the composition, add finely grated zest and cardamom to it. Then combine the mixture with the dough. Add the remaining flour, softened butter, knead the dough thoroughly.
Step 4
Leave it warm for 2 hours. Knead the dough a couple of times. Then two pretzels can be formed. On a table sprinkled with flour, halve the finished dough. Roll out a tourniquet from each half, roll it into a pretzel. Either grease a baking sheet or cover with baking paper. Lay the semi-finished product, leave it to rise, for 15 minutes.
Step 5
Heat the oven to 160 degrees. Before placing the baking sheet with the product in the oven, coat the cake with whipped yolk and sprinkle with chopped almonds. Bake the Easter pretzel for 35-40 minutes so that the top does not burn, you can cover it with baking paper. Gently place the finished baked goods on a wooden stand, cool, sprinkle with powdered sugar.
