For cooking you will need:

  • one hundred grams of soft butter;
  • one medium egg;
  • about two hundred grams of flour (you may need a little more);
  • three teaspoons of honey; 100 grams of sugar;
  • 1, 5 teaspoon of baking soda;
  • two teaspoons of ground ginger;
  • a teaspoon of ground cardamom;
  • a teaspoon of cinnamon.

Heat honey in a water bath so that it becomes liquid, and then cool slightly before adding to the dough. In a bowl, mash with a fork or beat with a mixer soft butter and sugar, add slightly cooled honey and an egg, and mix thoroughly until a homogeneous mass is formed.

In another bowl, combine the sifted flour, spices, and baking soda. Then sift again. This must be done so that no pieces of spices remain in the dough. Add the flour mixture in parts to the butter mixture and mix thoroughly so that flour lumps do not get into the cookies later. The dough should be sticky, so don't add too much flour. Usually a tablespoon is sufficient. Then the dough must be wrapped in plastic and put in the refrigerator for one and a half to two hours.

When you take the dough out of the refrigerator, do not crease for a long time, or even better - tear off in small pieces so that the butter does not have time to melt and it is easier to work with the dough. You can also make your life easier by rolling the dough between two sheets of parchment.

The recommended thickness of the layer is half a centimeter, but in general, it remains at your discretion - you can make it both thicker and thinner. By the way, it is advisable not to keep the dough at room temperature for a long time - it may "float". You need to bake gingerbread cookies in a well-heated oven, and when placed on a sheet, take into account that it will slightly increase in size. The gingerbread cookie will take about 7 minutes to bake and if overexposed it will be very dry. The finished cookie should be soft - it hardens literally a few minutes after you take it out of the oven. Cooled cookies can be coated with sugar glaze or made with New Year's themed drawings.
