After the foam appears, we increase the whipping speed, and when the mass starts to get heavy, we begin to gradually add the rest of the powdered sugar, without stopping whipping. We bring to strong shiny peaks.

Pour the yolks into a bowl of whites and stir gently by hand. The mixer must not be used, as proteins can settle from rough exposure.
Step 5
Sift the flour and gradually, in small portions, add to the egg mass, stirring gently as well.
Step 6
Preheat the oven to 180 degrees. We line the baking sheet with parchment.
Step 7
We take 1 tablespoon of dough and place in a pastry bag. We plant even flagella 2-3 cm in length. Sprinkle them with icing sugar on top.
Step 8
Place the baking sheet in a preheated oven. Savoyardi cookies bake very quickly, although the exact time will depend on your oven.
Step 9
When a beautiful golden crust appears on the products, they can be considered ready. Until this moment, it is undesirable to open the oven.
