I had a chance to taste this salad while visiting one inveterate summer resident and hunter. Its taste fully justifies the name. And even if you don't have your own garden, not to mention fresh game, it doesn't matter. All the ingredients you need are available at any supermarket.
It is necessary
- - duck fillet - 300 grams;
- - melon pulp - 300 grams;
- - Romaine lettuce - 1 bunch;
- - fresh cucumber - 1 piece;
- - red onion - 1 piece;
- - black or red currant jelly - 150 grams;
- - balsamic vinegar - 20 milliliters;
- - meat broth - 100 milliliters;
- - olive oil - 20 milliliters;
- - salt and pepper - according to preference.
Instructions
Step 1
Duck meat is quite tough, so it needs to be prepared before cooking. To do this, wrap the fillet in cling film so that there is no splashing, then do not beat it off with a kitchen hammer. Expand and season with salt on both sides. Heat vegetable oil in a frying pan and fry whole fillets for 10-15 minutes on each side. Then transfer the meat to a cutting board, remove excess oil and cut into small slices.
Step 2
Now you need to tackle the melon, herbs and vegetables. Wash the melon thoroughly, peel and remove seeds. Cut it into slices, and they, in turn, into slices, no more than meat. Rinse the salad and pat dry with a paper towel. Fold the leaves in a pile and cut into thin strips with a knife. Peel the onion and chop finely. Cut off the stem and receptacle of the cucumber; if desired, you can peel it. Cut in half and then slices. Thus, all ingredients should be approximately the same size.
Step 3
For a dressing that rightfully makes this salad original, you need to grind berry jelly with pepper, salt, vinegar and dilute it with broth combined with olive oil. At the end, it remains to put all the ingredients in a deep salad bowl and mix. It is better to refuel right before serving, in a portioned plate.
