Zucchini in the Slavic countries is a fairly popular vegetable, which is famous for its usefulness and nutritional value. This universal product is suitable for use by absolutely everyone - it is especially useful for people with diseases of the gastrointestinal tract. Zucchini can be used to prepare a wide variety of dishes, from soups to desserts.
Squash soup
To prepare squash puree soup, take: - 800 milliliters of vegetable broth; - half a glass of rice; - 2 zucchini; - half a lemon (juice and zest); - 1 tablespoon of vegetable oil; - 1 teaspoon of turmeric; - salt to taste and wheat croutons. Peel the zucchini and cut the flesh into small cubes. Pour the washed rice with hot broth, add lemon juice and boil everything over medium heat for 10 minutes. Fry the zucchini in a skillet with oil, sprinkle with lemon zest and season with turmeric.
When making soup, place the zucchini last in the pot, about 10 minutes before the end of cooking.
Put the fried zucchini in a saucepan, pepper the soup and salt. Cook for 10 minutes, then blend the soup until puree and bring to a boil. Serving, add wheat croutons to the soup and sprinkle with herbs.
Fried zucchini recipes
In order to cook delicious fried zucchini, take: - 3 zucchini; - 4 tablespoons of flour; - 1 tablespoon of vegetable or olive oil; - lemon zest, spices, salt and garlic to taste. Cut the unpeeled zucchini into circles (0.5 centimeters thick), immerse them in cold salted water for 10-15 minutes, put them in a colander and let dry. Season the zucchini in flour, season with spices, place in a skillet with butter and fry until browned. Place the finished zucchini on a dish in layers, sprinkle with herbs and garlic with lemon zest, passed through a press.
You can fry zucchini in any oil, without exceeding the frying time (5-7 minutes) when cooking for various dishes.
You can also make minced meat casserole from zucchini. You will need: - 1 kilogram of zucchini; - 500 grams of any minced meat; - 200 grams of carrots; - 100 grams of hard cheese; - 150 grams of onions; - 1 tablespoon of vegetable oil; - salt and spices to taste. Finely chop the onion and fry in oil, add minced meat, salt and season with spices. Grate the carrots on a fine grater, cut the zucchini into medium cubes and fry them with the carrots in a separate pan, then put the vegetables in the minced meat. Grate the cheese on a fine grater, put the zucchini and minced meat in a baking dish, sprinkle with grated cheese and bake for 20 minutes in an oven preheated to 180 ° C. Season the finished squash casserole with sour cream, onion or tomato sauce.
