A very tasty and dietary dish that requires a minimum of cooking time.
It is necessary
- Serves 4:
- 600 g white fish fillet;
- 2 large tomatoes;
- 1 large onion;
- 6 cloves of garlic;
- 1 large zucchini;
- 1 tbsp olive oil;
- A handful of prunes;
- Ginger, cumin, oregano, salt, white pepper to taste.
Instructions
Step 1
Steam and chop the prunes. Chop the onion into small cubes, chop the garlic. Cut the fish into 3 by 3 cm pieces, and the zucchini into small cubes. Scald the tomatoes with boiling water, peel them off and cut into small pieces.
Step 2
Heat oil in a frying pan, put onion and garlic in it and fry until transparent. Then add fish to the pan and fry for 2 - 3 minutes. Put tomatoes with liquid and prunes to the fish, season with spices to taste and keep on fire for 4 - 5 minutes.
Step 3
Transfer in portions to a baking dish and send to an oven preheated to 220 degrees for 20 minutes. Then put the zucchini cubes on top, lightly pepper and salt, cover and cook in the oven for another 10 minutes. Let it brew a little before serving. An ideal side dish is couscous or bulgur, but with regular rice it will be very worthy! Bon Appetit!
