Homemade sweet bread is a great alternative to store-bought buns. Bake it in a bread maker or oven, adding dried fruits, nuts, honey and other delicious ingredients to the dough.
Curd bread
This pastry will replace the usual muffin. Sweet curd bread can be baked for tea and served with jam or butter.
You will need:
- 250 g pancake flour;
- 60 g butter;
- 1 teaspoon of cinnamon;
- 60 g brown sugar;
- 1 apple;
- 2 eggs;
- 3 tbsp. spoons of milk;
- 100 g of cottage cheese;
- 60 g of walnuts;
- 0.25 teaspoons of salt.
Mix the sifted flour with salt and ground cinnamon. Add brown sugar and butter, chop the mixture into crumbs. Peel the apple, remove the core, cut the fruit into small cubes. Fry the walnut kernels in a dry frying pan and crush into coarse crumbs in a mortar. Add half of the nuts and apples to the flour crumbs. Pound eggs with cottage cheese and combine with a nut-flour mixture. Mix everything well.
Grease a bread pan with butter and pour the remaining nuts on the bottom. Place the dough in a mold and place in the oven preheated to 180 ° C. Bake the bread for about an hour, then turn off the oven and let it sit for another 5-7 minutes. Then place the bread on a wire rack and cool.
Bread with candied fruit and raisins
You will need:
- 500 g of wholemeal flour;
- 150 g of milk;
- 10 g dry yeast;
- 1 teaspoon of salt;
- 90 g butter;
- 180 g seedless raisins;
- 30 candied fruits;
- 60 g brown sugar.
Heat the milk, dissolve dry yeast and sugar in it. Heat the mixture for 15 minutes. Mix flour with salt and butter, chop everything into crumbs. Pour the yeast mixture into the butter-flour mass and knead the dough. Cover it with a towel, place it warm and let it rise. This will take about 1, 5 hours.
Add finely chopped candied fruits and pre-washed and dried raisins to the dough. Place the mixture in a greased bread pan. It is recommended to preheat the form. Let it warm for 1 to 2 hours for final proofing. Place the dish in the oven at 220 ° C for 30 minutes. Cover the top of the bread with foil 10 minutes before the end of baking. Remove the baked goods from the baking dish and cool on a wire rack. Serve warm, cut into slices.
Fruit and nut bread
You will need:
- 320 g of pancake flour with bran;
- 300 ml of milk;
- 1 egg;
- 250 g pitted dates;
- 2 ripe bananas;
- 60 g of hazelnuts;
- 100 g of butter;
- 1 teaspoon of baking soda.
Pour milk into a saucepan, add chopped dates and baking soda. Bring the mixture to a boil, remove from the stove and cool. Chop the butter and flour into crumbs, add hazelnuts, beaten egg and mashed bananas in a mortar. Pour in milk with dates, mix well.
Grease the cake pan with butter and pour the dough into it. Preheat the oven to 180C and bake the bread for about an hour. Check readiness with a wooden stick. Cool the bread on the wire rack and serve with tea.
