Sea trout, or brown trout, belongs to the salmon family. It is a red fish high in omega-3 fatty acids, vitamins A, D and B12. It is perfect for baking, boiling and salting. Scientists have found that the inclusion of red fish in the diet reduces the risk of cancer and hypertension, improves memory and relieves depression.

It is necessary

    • For dry salted trout:
    • 1 kg of fish;
    • 2 tbsp. tablespoons of salt (no top);
    • 1 tbsp. a spoonful of sugar (no top);
    • ground pepper;
    • dill.
    • For Finnish Trout Soup:
    • 500 g sea trout fillet;
    • 4-5 pieces of potatoes;
    • 1 head of red onion;
    • 400 ml milk 6%;
    • 1 tbsp. a spoonful of flour;
    • ground white pepper;
    • greens;
    • salt;
    • a few drops of lemon juice.
    • For trout with fruit sauce:
    • 250-300 g sea trout fillet;
    • 1 orange;
    • 0.5 cups sliced pineapple;
    • 1 tsp honey;
    • 1 tbsp. a spoonful of lemon juice;
    • 2-3 cloves of garlic;
    • 2 tbsp. tablespoons of olive oil;
    • 2 tbsp. spoons of soy sauce;
    • 1 teaspoon tomato paste;
    • salt;
    • spices to taste.

Instructions

Step 1

Dry salted trout. Scale the fish, wash and dry well with a paper towel (this is very important). Combine salt and sugar in a bowl and rub the fish on all sides with this mixture. If desired, you can slightly pepper it (white and black ground pepper are good for this), and sprinkle with dry dill and coriander.

Step 2

Place the fish in a clean dish, cover with a napkin and refrigerate. Flip the trout once a day so that it is well salted on all sides. After four days, the dry salted fish will be ready. Fillet it. To do this, cut along the ridge, remove the bones and cut the trout into portions.

Step 3

Finnish Trout Soup Peel the potatoes, wash and cut into large cubes, about two to two and a half centimeters each. Peel the onion and cut into thin half rings. Pour a liter of water into a saucepan, put on fire, salt and boil. Then dip the vegetables in it and boil for ten minutes.

Step 4

Chop the trout into large pieces and add to the vegetables. Season with pepper and a few drops of lemon juice and cook for another ten minutes. Pour flour into milk, mix thoroughly until smooth. Pour the milk mixture in a thin stream into the soup, stirring continuously. Bring it to a boil and remove from heat. Wash and finely chop the herbs. Add it to soup bowls before serving.

Trout with fruit sauce Season the prepared trout fillet with salt, pepper, drizzle with lemon juice and set aside for fifteen minutes. Preheat the oven. Grease a baking dish with oil, lay out the fillets (stack them so that there are no voids). Sprinkle a little olive oil on the trout and place in the oven for ten minutes.

Step 6

Squeeze the juice out of the orange, mix it with the lemon, pour into a small saucepan or skillet and heat. Bring to a boil and simmer over medium heat for three minutes. The juice should boil down a little. Cut the pineapple into small cubes (you can use fresh, frozen or canned pineapple) and add it to the juice along with the garlic passed through a press. Add honey, soy sauce, tomato paste and pepper. Mix all the ingredients well, bring the sauce to a boil and simmer for two minutes. Remove the trout from the oven, pour the sauce into it and put it back in the oven for five minutes. Boiled rice is ideal for garnish with trout with fruit sauce.
