Step 1

Lemon dessert with geraniums and cookies

A creamy lemon dessert with geraniums has a very unusual taste. Buy a pot of lemon geranium from a flower shop - you will need some fresh leaves. Rinse them with water, pat dry, place in a bowl. Squeeze lemon juice and finely grate some zest.

Step 2

Fill the geranium leaves with freshly squeezed lemon juice and white wine. Add sugar. Leave the mixture to infuse for 10-15 minutes, then remove the leaves.

Step 3

Mix the lemon-geranium tincture with heavy cream and beat the mixture with a mixer until thick and sharp peaks are formed. Divide the mixture into vases or bowls and place them in the refrigerator for half an hour. Garnish with geranium leaves, lemon zest and airy cookies before serving.

While the dessert is in the fridge, make some airy cookies. Whisk the whites and sugar into a thick foam, add flour and orange zest. Use a piping bag to place the flower cookies on a baking sheet lined with parchment paper. Bake for about 5 minutes in the preheated oven. Serve chilled.

Lemon Cream Pie

Grind the cookies in a blender or crush them in a mortar. Melt the butter, mix with the cookies and pour the mixture into a mold, flattening it into a thin layer.

Squeeze the juice from the lemons, grate the zest. Whisk the well-chilled cream into a thick, dense foam. Beat the egg with sugar and add to the cream, mix thoroughly. Pour lemon juice into the mass, add zest and mix again. Place the cream on top of the crust and place the cake in the preheated oven.

Step 7

Bake the dessert for about 15 minutes. Remove it from the oven and leave to cool completely. Then remove the cake from the mold. Serve on portioned platters sprinkled with lemon zest and a spoonful of natural yogurt or vanilla ice cream.
