    • 150 g butter;
    • 50 g icing sugar;
    • salt;
    • 150 g flour;
    • 1 yolk;
    • 1 can of canned apricots;
    • 200 ml of red wine;
    • 1 orange;
    • 1 pack. vanilla pudding;
    • 1 tbsp Sahara;
    • 1 tbsp bread crumbs;
    • 1 sachet of cream thickener;
    • 1 bag of vanillin;
    • 200 ml of cream.

Instructions

Step 1

For shortcrust pastry, grate the chilled butter on a coarse grater. Add powdered sugar, flour, yolk and a pinch of salt to the resulting flakes. Stir all the products with a spoon or mixer with a special attachment, and then knead the dough with your hands until it becomes smooth and elastic. Roll up a bun, wrap with cling film and refrigerate for 30-40 minutes.

Step 2

Drain the apricot syrup into a small saucepan, add the red wine and the zest removed from the orange. In a bowl, combine a packet of vanilla instant pudding with a spoonful of sugar and dilute with 6 tablespoons of the resulting liquid. Bring the remaining "wine" syrup to a boil, pour the vanilla mixture into it, stir thoroughly, remove from heat.

Step 3

Preheat oven to 175C. Take a flat fireproof dish with a diameter of 22 cm, brush it with butter, sprinkle with bread crumbs. Roll out the shortbread dough taken out of the refrigerator on a work surface dusty with flour, lay out a form for it, make a small side along the walls. Prick the bottom of the crust several times with a fork.

Step 4

Set aside three apricots for decoration, divide the rest into two equal parts. Cut one of them into cubes, distribute over the dough. Break the second one with a blender until puree, mix with the cooled pudding. Cover the apricots laid out on the crust with the resulting mixture, bake for about 35-40 minutes on a medium level.

Step 5

Remove the finished cake from the oven, let it cool. If you have a detachable form, it is better to remove it, and if it is an ordinary ceramic one, serve it directly in it - it will look very impressive. Whip the cream with the fixer and vanilla sugar, and place three large blobs of egg whites on the surface of the cake. Place apricots on top to represent the fried egg yolks.
