Liver with figs can be cooked by frying it on wooden skewers, grilled liver or an original French dish - pate. It is a liver pate with figs, baked in foil. It can be prepared both for a romantic dinner and for a festive table.

- 400 g chicken liver;
- 600 g of chicken meat (from the thighs);
- 3 cloves of garlic;
- 1 tbsp fresh thyme leaves;
- 1/4 cup port
- 1 egg;
- 2 tsp salt;
- 1 tsp ground black pepper;
- 1/4 cup pistachios
- 1/2 tbsp. dried figs.
- Recipe number 2 (liver with figs on skewers):
- 300 g of beef liver;
- 150 g white bread (baguette);
- 2 pcs. dried figs;
- 2 bunches of sage;
- 1 sprig of rosemary;
- 2 cloves of garlic;
- 2 pods of hot pepper;
- 3 tbsp vegetable oils;
- 3 tbsp oil drain.;
- lettuce leaves.
- Recipe number 3 (grilled liver):
- 400 g chicken liver;
- some nutmeg;
- 2 tbsp olive oil;
- pepper
- salt to taste;
- fruits of fresh figs;
- a handful of raspberries;
- 50 g walnuts
Instructions
Step 1
Place the chicken liver in cold water for ten minutes. After soaking, dry it and put it in a skillet, fry in vegetable oil. Cool the liver slightly and mince or grind in a blender.
Step 2
Chop the chicken and add it to the liver. Soak the figs in the wine. Fry the pistachios (without the skin) in a skillet without oil and grind them the same way. Chop the garlic and thyme leaves finely.
Step 3
Beat the egg. Cut the figs soaked in wine into small pieces. Add all this to the minced liver and meat, salt and pepper, pour in the wine and mix well.
Step 4
Grease a baking dish with oil and cover with foil. Lubricate the foil with oil as well. Place the mixture in a baking dish and cover with foil. Pour water into a second container, which is larger than the first, and place the pate pan into it.
Step 5
Place this water bath in the oven at 180 ° C for an hour and a half. Watch the water level while cooking and add it periodically. Remove the foil from the dish, refrigerate and place the liver pate with figs on the dish.
Step 6
Prepare skewered liver with figs. Cut it into small cubes, after removing the foil from the liver. Place the pieces in a bowl.
Step 7
Chop the garlic, rosemary and pepper into small pieces. Stir them, salt and pepper and add sunflower oil. Pour this mixture over the liver and put in the refrigerator to marinate for two hours.
Step 8
Put the figs in warm water for half an hour and then cut them into wedges. Cut the baguette into slices. Take wooden skewers and place liver, bread, figs and sage leaves on top of them.
Step 9
Heat a skillet with butter and place the skewers. Fry everything for five minutes and season with salt. Put lettuce leaves on a dish, and put skewers with ready-made liver on them.
Step 10
The liver can be grilled with fig raspberry sauce. Soak the chicken liver in cold water. Season with salt, pepper, add nutmeg.
Step 11
Refrigerate the liver for half an hour. Then put olive oil in it. Stir and place the liver on the grill rack. Cook it at 200 ° C.
Step 12
Make a raspberry fig sauce. Peel fresh figs and walnuts. Grind them with a blender, add raspberries and herbs and mix again. Place the cooked liver on a dish and pour over the prepared sauce.
