Dessert creme brulee literally translates as burnt cream - a mixture of egg yolks with sugar and cream, when baked, this mixture forms an appetizing caramel crust. The most important thing in making creme brulee is to slowly pour the cream into the whipped yolks so as not to spoil the whole treat. Instead of raspberries, other berries and fruits are also suitable, for example, peaches or cherries.

It is necessary

  • For six servings:
  • - a glass of fresh raspberries;
  • - 4 egg yolks;
  • - 8 tbsp. tablespoons of sugar;
  • 2 1/4 cups heavy cream
  • - 1 teaspoon of vanilla extract.

Instructions

Step 1

Place the fresh raspberries in 6 portion molds. Beat the yolks with 2 tbsp. tablespoons of sugar with a mixer - you get a creamy light mass.

Step 2

Heat the cream in a saucepan over low heat, you cannot boil it! Remove from heat, add vanilla extract, cool for 5 minutes.

Step 3

Slowly pour the cream into the yolks, whisking the mixture. When it becomes smooth, pour it into a saucepan, return to low heat. Cook for 2 minutes, stirring with a wooden spoon, until the mixture thickens.

Step 4

After that, strain the cream through a sieve, pour it into molds on raspberries, cool. Cover and refrigerate for a couple of hours, maybe even until the next day.

Step 5

Before serving crème brulee, remove excess moisture from the surface of the cream - use a paper towel. Sprinkle with sugar, place the molds under the heated broiler. Leave the dessert on for 20 minutes, the crust should harden.
