Tart is a French cuisine dish. It is an open cake with a shortcrust pastry base. Depending on the filling, it can be either a dessert or a main course.

- For the test:
- Flour 200 gr.
- A pinch of salt
- Sugar to taste (about 2-4 tablespoons)
- Butter (chilled) 100 gr.
- Egg yolk 1 pc.
- Water 1 tbsp. the spoon
- Lemon juice 1 tbsp the spoon
- For filling:
- Fresh cherry 600 gr
- Potato starch 5-6 tbsp. spoons
- Sugar (about 100 grams, if cherries are too sour - 150 grams or more)
Instructions
Step 1
Sift flour into the blender bowl, add sugar, salt. Add cold butter, cut into cubes, beat the mixture in a blender for a few seconds until fine crumbs are formed. Add the yolk and beat for a few more seconds until smooth.
Step 2
Add water and juice and quickly form a ball out of the dough. We wrap with cling film and put in the refrigerator for 30-40 minutes.
At this time, we wash and free the cherries from the pits.
Step 3
Roll out the dough in a thin layer, transfer the layer to the mold and trim the sides. We prick the form with a fork in several places and put it in an oven preheated to 180 degrees for 15 minutes.
At this time, we prepare the filling: add sugar and starch to the cherries, put on medium heat and mix thoroughly. It is necessary to heat the filling to a very thick jelly state (if necessary, add more starch). It will take 7-10 minutes.
Step 4
After the time has elapsed, take out the base from the oven and pour the filling into it, level it. Put the tart back in the oven for 10-15 minutes until the filling hardens. Before serving, the tart should be cooled to room temperature, otherwise the filling will begin to drain from the base.
