Fill the sink with cold water 5-6 centimeters and put soda and a whisk next to it. Time plays an important role, so everything should be at hand.

In a small saucepan with a heavy bottom, combine the sugar, water, corn syrup, vinegar, and tartar.

Attach a thermometer to a saucepan and heat it over moderate heat. It is not necessary to stir the contents of the pan.

The boiling mixture should be brought to a temperature of 150 degrees. When the thermometer has reached the desired temperature, the pan must be removed from the heat and carefully placed in a sink with cold water. Add baking soda there immediately and beat with a whisk. The mixture will foam and sizzle. This is good, you need to keep beating more.

While the mixture has not cooled, it should be transferred to a baking sheet. The candy will quickly harden, but you will have to wait another 15-20 minutes until all reactions and processes are over. The finished candy must be broken into pieces.

The chocolate should be melted in a water bath, poured over the candies and sprinkled with sea salt to contrast the flavors. Send the candy to the refrigerator to harden the chocolate.
