Step 1

Chop onions, carrots and bell peppers. Onions - in half rings, carrots - in cubes, about a centimeter by centimeter in size, bell peppers - in thin rings. Grind the walnut into crumbs. Heat the sunflower oil in a skillet with high sides. Saute the onions in it until slightly golden brown. Be careful not to burn the onions. Add carrots and bell peppers here. Simmer over low heat until vegetables are tender.

Add tomato paste to the vegetables, mix well and pour in half a glass of warm water. Bring to a boil, stirring constantly to prevent it from burning.

Then add salt, black pepper, curry, turmeric and cumin. Use red peppers to taste. If you are not a fan of spicy, then it will be enough to cut off the top of the pod. Add chopped walnuts to the same mass.

When the sauce begins to thicken, add herbs and garlic to it. Chop a couple of sprigs of dill and dzhusai, finely chop the garlic. These foods need to be cut a few seconds before they go into the sauce. Otherwise, all the aroma will disappear from them.

Cook the sauce for a couple more minutes and remove from heat. Transfer to a ceramic or glass bowl. Never use aluminum cookware. In it, the sauce can oxidize and its taste will deteriorate. The sauce should be infused and cooled.
