It is necessary

    • For the test:
    • 1, 5 cups flour;
    • 0
    • 75 cups of sugar;
    • 150 g butter;
    • 1 egg.
    • For the cream:
    • 1 glass of milk;
    • 8 teaspoons of sugar;
    • vanillin;
    • 1 egg;
    • 2 tablespoons flour.
    • For decoration:
    • 2 sweet oranges;
    • 4 tablespoons of thick orange jam
    • cocktail cherries.

Instructions

Step 1

Make a shortcrust pastry for the baskets. Place the butter, sugar and eggs in a deep bowl and grind them with a wooden spatula until smooth. Pour flour into the butter mass and knead the dough with your hands. Place it in a bowl and refrigerate for 15 minutes.

Step 2

Roll out the dough and place in ceramic, metal or silicone tins. The layer of dough should be very thin - then the finished products will turn out to be crumbly and tender. Place small pieces of parchment paper on top of the dough and top with dry peas or beans. This technique will prevent the dough from rising and keep the walls of the baskets thin.

Step 3

Place the molds on a baking sheet and place in the preheated oven. Bake the cakes for about 15 minutes, remove the peas and paper, and return the tins to the oven for 5 minutes. Remove the baskets from the oven and refrigerate. After cooling, remove the cakes from the molds.

Step 4

Make a light milk cream. Heat the milk, grind the egg, sugar and vanillin in a saucepan, add two tablespoons of flour and stir until the mixture is completely homogeneous. Pour warm milk into the mixture and place the saucepan on the warm stove top. While stirring, heat the mixture until thickened. Remove the cream from the stove and refrigerate.

Step 5

Put jam in a small saucepan, add a tablespoon of water. While stirring, bring the mixture to a smooth glaze. Remove the saucepan from heat and cool the mixture to thicken slightly. Dip a silicone brush in the icing and brush the bottom of each basket.

Step 6

Using a pastry syringe with a star-shaped nozzle, transfer the cream into baskets. Peel the oranges and remove the films from the wedges. Place the wedges on top of the cream in a circle. Use a brush to apply the icing to the oranges.

Step 7

Finished cakes can be garnished by placing cocktail cherries in the center of each or sprinkling with some finely grated orange zest.
