In summer, you can treat yourself and your loved ones to cold light strawberry soup. This soup can be a great addition to the table.
It is necessary
- - 450 g fresh strawberries;
- - 50 g of icing sugar;
- - 5 g of basil leaves;
- - 50 g of premium flour;
- - 2 pcs. chicken eggs;
- - 100 g of creamy ice cream;
- - 100 g heavy cream;
- - 5 g thyme;
- - 100 g of mint leaves;
- - salt to taste.
Instructions
Step 1
Take fresh strawberries. Rinse well in cold water, dry a little and remove the leaves. In a large bowl of blender, beat the strawberries with a little water at full speed.
Step 2
Rinse the greens in cold water and hang them in a shaded place so that the greens dry out and wither a little. Leave some leaves for decoration. Chop the rest and add to the strawberries.
Step 3
Add thyme, basil and powdered sugar to the whipped berry. Whisk the mixture again until smooth. Pour the mixture into another bowl, cover and cool in the refrigerator.
Step 4
Make a batter. To do this, beat the eggs, flour and salt with a whisk. Add cream gradually. Stir the dough until smooth. The mass should be thicker than for pancakes.
Step 5
Take a small saucepan, pour cold water into it, add a little salt and place on the stove. Bring water to a boil. Make small dumplings from the dough. You can just tear it into small pieces and throw it into boiling water. Cook for five minutes. Remove the finished dumplings and cool. Divide the cold dumplings into bowls. Remove the cold strawberries and pour over the dumplings. Garnish with ice cream and mint.
