A healthy, quick salad made from the simplest and most affordable ingredients. You can fill such a salad with fresh sour cream or liquid yogurt, you get a new spicy dish.
It is necessary
- - 100 g of chopped walnuts;
- - 400 g of fresh cucumbers;
- - 1 red onion;
- - 150 g fresh mint greens;
- - 1 chili pepper;
- - 1 lemon;
- - 5 g of sugar;
- - 20 ml of olive oil;
- - salt to taste.
Instructions
Step 1
Rinse cucumbers well in cold running water. Let them dry a little. Use a sharp knife to cut into very thin slices. You can use a simple grater or vegetable cutter. Transfer the cucumbers to a large glass bowl, sprinkle with some salt and refrigerate.
Step 2
Rinse the chili peppers, remove the seeds and cut into small cubes. Rinse the mint and hang it up to dry a little. Disassemble the dried mint into leaves, cut the large leaves into several parts.
Step 3
Wash the onion in cold water, peel and cut into two halves. Put in the refrigerator for half an hour. Finely chop the cold onion into half rings. Wash the lemon, peel and squeeze the lemon juice. Take half the lemon zest and chop finely.
Step 4
Remove the cucumbers and add lemon zest, mint, and chili to them. Sugar a little and pour over with lemon juice. Put in the refrigerator for another half an hour, having previously covered it tightly with a lid.
Step 5
Place the walnuts in a ceramic mortar and heat a little. Allow the salad to cool slightly in the refrigerator before serving and sprinkle each serving with crushed walnuts. If you are on a diet and avoid fatty foods, you can skip the salad dressing with oil or replace it with low-fat yogurt.
