Step 1
Peel the herring and remove the head, tail, fins. Remove fish fillets from the ridge and remove large bones.

Boil the potatoes, mash in mashed potatoes, add butter and mix well.

Peel the onion, chop and fry in vegetable oil. Grate the cheese on a fine grater. Break the egg and carefully separate the yolk from the white. Whisk the protein lightly.
Step 4
Pass the herring fillet through a meat grinder, mix with mashed potatoes, fried onions, cheese, yolk and flour. Mix well with your hands.
Step 5
From the resulting mass, blind into small cutlets, dip each in protein and bread in breadcrumbs.
