  • Dough:
  • - 25 grams of compressed yeast,
  • - 150 grams of sugar
  • - 1 teaspoon of salt,
  • - 240 ml of milk,
  • - 650 grams of wheat flour,
  • - 120 grams of butter,
  • - 2 eggs,
  • - 3 egg yolks,
  • - 1 tbsp. a spoonful of lemon zest,
  • - 1, 5 Art. tablespoons of orange peel,
  • - 150 grams of raisins,
  • - 2 teaspoons of vanilla extract.
  • Glaze:
  • - 120 grams of powdered sugar,
  • - 1 egg white,
  • - 1 teaspoon of lemon juice.
  • Yet:
  • - 20 grams of confectionery dressing.

Instructions

Step 1

Combine crumbled yeast with a tablespoon of sugar and warm milk. Stir until smooth.

Step 2

Add 4 tablespoons of sifted flour, mix and leave for 30 minutes.

Pour raisins with boiling water and leave aside for 20-25 minutes.

Step 4

Drain the water from the raisins, mix with the zest and vanilla. Add to the dough and mix.

Step 5

In a bowl, mix eggs with yolks, sugar and softened butter. Put the resulting egg mixture into the dough, mix well. Add half of the sifted flour, stir.

Step 6

Add a mixture of raisins, zest and vanilla, mix.

Step 7

Add the remaining sifted flour and knead the dough.

Step 8

Lubricate the bowl with butter and transfer the dough into it, cover with foil and leave for three hours.

Step 9

We knead the dough that came up. Then we divide into 2-3 parts, depending on how many molds. From this amount of dough, you can bake two medium Easter cakes. We spread the dough into molds, cover with a towel and leave for half an hour.

Step 10

Beat the egg white with powdered sugar and lemon juice. The glaze is ready.

Step 11

We bake the cakes for about 35 minutes (we check the readiness with a toothpick) at a temperature of 180 degrees. Cool the cakes, cover with glaze and decorate with sprinkles.
