A very tasty and original dish is obtained from stuffed eggplant prepared in the form of shoes.
It is necessary

- - 1 carrot;
- - 1/3 cup rice;
- - 1 chicken egg;
- - 1 onion;
- - 1 tomato;
- - 100 ml of tomato juice;
- - 50 g green onions;
- - 100 g of cheese (hard varieties);
- - ground black pepper;
- - salt.
Instructions
Step 1
Prepare the stuffing stuffing (pork-beef). Boil the rice until half cooked. Finely chop the onion and lightly fry until translucent. Add the grated carrots, continue to fry for another 5 minutes.
Step 2
Then add the sliced tomato, previously peeled, and stirring occasionally, fry with the vegetables for 5 minutes. Add rice to the minced meat, then fry, chopped green onions, salt, black pepper, mix well and set aside for now.
Step 3
Pick up eggplants that are even, of the same or approximately the same width and length, and wash them. Cut off the top of the eggplant and the "bottom" - the green part with a sharp knife. Scrape out the pulp with a spoon. Place the pulp and eggplant in salted cold water for an hour to remove the bitterness from them.
Step 4
Finely chop the eggplant pulp and add to the minced meat. Also put an egg, dry parsley and dill (if any) in the minced meat. Stir everything until smooth.
Step 5
Fill the shoes with minced meat and place on a greased baking sheet. Pour some tomato juice into each.
Step 6
Cook in oven at 220 ° C for about 1 hour. Put the sliced cheese on the ballerinas 5 minutes before cooking. Serve hot.
