Cherry pies are one of the traditional Russian dishes. They were present both at the tsarist feast and at the tables in the families of the workers. Cherries are one of the most successful baking berries. It will give the taste a slight sourness, give juice, but will not make the dough of the finished pies wet. Cherry pies can be made both in summer using fresh berries and in winter with frozen or dried berries.

- Flour - 500 g
- Egg - 2 pieces
- Butter - 50 g
- Cream (10%) - 250 ml
- Yeast - fresh 25 g or dry 11 g
- Sugar - 50 g
- For filling:
- Cherries - 500 g
- Sugar to taste
- Starch - 1 tbsp. l.
Instructions
Step 1
Make a dough. Heat the cream to 37-40 degrees Celsius. Add yeast to 100 milliliters of warm cream, dissolve it completely. Add sugar and salt. Pour in 50 grams of flour and mix thoroughly. The consistency will resemble kefir. Leave the dough in the dough for 20-25 minutes, until foam appears and expands.
Step 2
Melt the butter, add to the remaining cream. Add sugar, salt and eggs there. Into the resulting mixture, add the finished dough, mix thoroughly, without leaving any lumps. Add the remaining flour and knead the dough with your hands. Leave the pie dough to dry for 2-3 hours.
Step 3
Peel the cherries, cover with sugar and let stand for 15-20 minutes. Drain the syrup, add a spoonful of starch, mix thoroughly and let stand for another 15 minutes.
Step 4
Roll a sausage from the finished dough and cut into circles. Roll each of the circles or knead it with your hands. Place the prepared filling on top of the dough and shape into a pie by joining the edges of the dough.
Step 5
Cover the pies with a napkin and let them come up. You can brush the pies with a beaten egg. Pierce in several places with a fork to prevent swelling of the dough.
Place in an oven preheated to 180 degrees for 35 - 40 minutes.
Step 6
Put the finished pies on a plate, cover with a clean cotton towel and let stand for a few minutes. The patties are delicious both hot and cold.
