Various types of meat are suitable for preparing delicious tender minced meat: beef, pork, veal, lamb, poultry and fish. Choose meat with fat, then the minced meat will turn out to be more juicy and tender.

Wash the meat intended for minced meat under running water, remove tendons and films, cut into small pieces and pass through a meat grinder. However, do not grind it very finely, as for a paste, use the largest grinder grid for mincing.

Bread gives the minced meat extra juiciness and makes it tender due to the fact that the juice released by the meat during frying or baking, if there is bread in the minced meat, collects in the bread crumb and does not go outside. It is better to use stale white bread, from which you need to cut off the crust. Then soak the bread slices in milk, broth, or cold water. To make the minced meat airy and tender, add not the whole egg to it, but only the yolk, separated from the protein. This method is especially effective for minced veal or fish.
