The fact is that the water remaining on the meat during frying will help reduce the temperature in the pan. The meat will cook slowly and will lose a lot of juice, making the chop dry. To add juiciness to the dish, brush the meat with mustard before breading and leave for an hour.

Salt the steamed meat only before frying, as the salty chunk gives off juice, and when cooking the chop, it is important that it stays inside the meat. Salt the pieces of unpaired meat after a crust forms on them during frying, retaining the juice inside the chop.

You can also keep the juice inside the meat using breading. Meat should be breaded in flour or bread crumbs. For double breading, roll the chop in flour, dip in a beaten egg, and then roll in breadcrumbs.

Melt a piece of butter in a skillet. Place the chop in a well-heated skillet for a quick crust on the meat. Cook the pork chops on each side for 5-6 minutes.

If the crust does not have time to form during this time, the pan and the oil in it are not heated well enough. If a beautiful and ruddy crust has formed, but the meat remains damp inside, bring it to readiness in the oven or microwave.
