Instructions
Step 1
Recipe number 1. Sort out the prunes: remove the dry garbage, separate the spoiled, unripe berries from the main mass and remove the stalks. Pour over the fruit with warm water and leave for 15-20 minutes. Then rinse thoroughly under running water. Pour 700 ml of water into an enamel saucepan (1.5-2 liters) and bring to a boil. Pour sugar into the boiling liquid and simmer for 5-7 minutes, stirring occasionally. Add prunes to the sugar syrup and keep on fire for another 17-20 minutes. Turn off the finished compote, let it brew for an hour and serve chilled. Add a slice of fresh lemon or a few mint leaves to a glass of compote.
Step 2
Recipe number 2. Pour water into an enamel pot and heat to boiling point. Put the washed and sorted prunes in a colander and immerse them in boiling liquid for a few minutes (3-5), until the skin begins to burst. Remove the colander with berries from the boiling water and put it in a saucepan of cold water for 5-7 minutes. Then remove the skin from the prunes and, cutting it into two halves, remove the seeds. In an enamel saucepan, bring a quart of water to a boil. Pour sugar into boiling water and, stirring occasionally, cook for 5-7 minutes, reducing heat to a minimum. Add prepared prune halves to the sugar syrup and leave on the fire for another 10-15 minutes. Wash the apples under running water. Cut them into two halves and remove the core, peel the skin with a thin layer. Then divide each half into 4-5 more pieces. Add the apples prepared in this way to the prunes and cook for another 7-10 minutes. Add the cinnamon to the saucepan a few minutes until tender. Turn off the finished compote, and before serving, let it brew for 40-50 minutes.
Step 3
Recipe number 3. Rinse prunes, dried apricots and raisins several times well in warm water, remove the stalks and soak in warm water for 5-7 minutes (separately from each other). Cook sugar syrup in an enamel saucepan and, adding prunes to it, leave on low heat for another 12-15 minutes. Add raisins to a saucepan and cook for another 5-7 minutes. Then add dried apricots and keep on fire for another 2-3 minutes. Disconnect the finished compote and set aside for at least an hour.
