- For the cake:
- - 8 tablespoons (1 stick) unsalted butter, melted
- -1/4 cup sugar
- -1 teaspoon vanilla extract
- -1/8 teaspoon salt
- -1 glass of flour
- For filling:
- -2 cups heavy cream
- -2/3 cup granulated sugar
- -Zest of 1 lemon (about 1 and 1/2 teaspoons)
- -5 tablespoons lemon juice (from about 2 lemons)

Preheat oven to 350 degrees.

In a large bowl, mix all the crust ingredients thoroughly. The dough will be quite soft. Place the resulting mixture in a pre-prepared baking dish. Make sure the mass is evenly distributed. Place in refrigerator for 15 minutes.

After the cake has cooled, bake it for 20 minutes until deep golden brown. After, let cool completely.

When the pie is completely cool, make the filling: put the cream and sugar in a small saucepan and heat over medium heat until boiling, stirring occasionally. Allow the sugar to dissolve completely and add the lemon zest and simmer for 5 minutes.

Remove the pan from heat and add lemon juice. Let cool for about 15 minutes.

Place the chilled pie crust on a baking sheet and pour out the mixture, leaving about 1/3 the distance from the sides of the crust to the filling. Put the finished cake in the refrigerator for 2-3 hours. Serve cold or slightly warm.
