Strawberry puree cupcake
For cooking you will need:
- strawberries - 250 grams;
- wheat flour - 2 glasses;
- butter - 250 grams;
- sugar - 1, 5 cups;
- eggs - 4 pieces;
- baking soda - 1 tsp.
For a richer cupcake, use fresh strawberries. But if you are cooking out of season, you can easily get by with frozen berries. Strawberries should be ground in a blender or minced. It is necessary to get a homogeneous puree without lumps.
Place the strawberries in the refrigerator and prepare the dough at this time. Separate the yolks and whites. Grind the yolks with sugar and baking soda. Add sifted flour to oxygenate the dough. Knead thoroughly.

Mix eggs thoroughly with sugar and vanilla. Add kefir, soda (no need to extinguish). Stir with a spoon and gradually, very slowly add flour. After the introduction of flour, the dough should have the consistency of thick sour cream.
If you are using fresh strawberries, sort out, wash and dry. Defrost the frozen berry completely and drain the juice.
Sprinkle a baking dish with flour and brush with butter (margarine). Divide the dough into 2 parts. Pour the first part of the dough into the mold. Put strawberries on top of the dough. Pour in the second part of the dough.
It is necessary to bake the cake in a well-heated oven for an hour. Check readiness with a toothpick. Sprinkle the cake with icing sugar on top. For a juicier cupcake, you can pour strawberry juice on top of the finished cake.
