The name of the Tatar national dish echpochmak literally means a triangle. These triangles are prepared from yeast dough, although unleavened dough is allowed, and lamb, raw potatoes and onions are used in the filling.

Instructions
Step 1
Pour warm water or milk into a small bowl. The liquid temperature should not exceed 50 ° C, but not lower than 45 ° C. Put sugar in milk or water, gently sprinkle dry yeast over the surface, let it soak for a few minutes and beat with a whisk.
Step 2
Sift flour and salt into a large bowl. Pour the oil into it first, and then the yeast. If you have a food processor or mixer, knead the dough using the hook attachment. If you prefer to knead the dough with your hands, place the go on the table and knead well, crushing the edges with your palm towards the middle. Gather the kneaded dough into a ball, place in a container and cover with a clean towel. Remove the container with the dough in a warm place for 40-60 minutes. The optimum temperature for the dough is 25-27 ° C. Make sure that there are no drafts in the place where you removed the dough. Wait for the dough to rise.
Step 3
Place the dough on a work surface and wrinkle it. Put it back in the bowl, cover with a towel and put it back in a warm place. Wait for the dough to rise a second time. It will take about the same amount of time as the first one.
Step 4
Sprinkle flour on a work surface, place the dough on it and divide into several parts (6-8). Roll all the pieces into round tortillas and place the filling in the center of each. Pinch the edges of the cakes to form a triangle with a hole in the middle. Let the pies stand, brush with melted butter and place in the oven, preheated to 190 ° C.
Step 5
After 20 minutes, remove the pies from the oven, pour some hot broth into the holes, brush the surface with yolk and put the echpochmaki back in the hot oven for another 20 minutes. Remove the pies, pour the broth into the holes again, brush the surface with butter, cover the pies with a linen towel and let stand for 5-10 minutes. The triangles are ready.
