Cheesecake is considered a very capricious dish. And all because there are some secrets of its preparation, which housewives often neglect. The first secret is choosing the right products. Above all, choose your cheesecake cream cheese carefully. You shouldn't buy one that's already whipped - this cheese has little air, so your cheesecake will not be fluffy enough. Choose cheese in a briquette. Mascarpone or Philadelphia cheeses are considered classic for cheesecake. For the base of your cheesecake, choose a shortbread cookie. Among domestic brands, for these purposes, for example, “Yubileinoye” cookies are very suitable.

First, prepare your cheesecake base. To do this, grind the cookies in a blender or meat grinder. Melt the butter and add to the liver, stir very thoroughly until smooth. Put the resulting dough in an even layer in a baking dish and tamp it along the bottom and walls of the form. Put the mold in the refrigerator and start preparing the filling.

Now in a bowl, start whisking the cream cheese along with the sugar. Gradually add the cream, eggs and vanilla sugar to the mixture while whisking. Preheat the oven to 160 degrees. Put the mold there and leave for 1, 5 hours. After that, turn off the oven, open the door slightly - let the cheesecake stand there for another hour.
