Wine vinegar is widely used in countries where large quantities of wine are produced. This recipe is one of the most famous.

Step 1
There are 2 types of wine vinegar: red and white. The color of the vinegar depends on the wine chosen for its preparation. Red vinegar is best made from Cabernet, malbec, merlot wines. White vinegar is made from dry white wines. It is considered to be lighter than red and much cheaper. Vinegar with an acidity of 6-8% is considered good.
Step 2
You will need a good leaven to make wine vinegar. To prepare it, take ripe grapes (wine varieties) and carefully squeeze the juice out of it. Pour it into a bottle, put it in a warm room and leave to ferment. Do not seal the bottle too much, as there must necessarily be an outflow of carbon dioxide, which is formed later. In the first stage of fermentation of grape juice, you will get wine, and then, if you do not lower the air temperature, you will get wine vinegar, which you will use as a starter in the future.
Step 3
Take an oak barrel, pour any wine of your choice into it. You can also choose a cheap one, as long as it is natural. Add some sourdough to start the fermentation process. If you don't have an oak barrel, you can also use a regular glass bottle and dip a small piece of oak wood into it. Some experienced winemakers also add a small cinnamon stick. Then place the bottle with the contents in a dark and warm place. Leave it on for 30-40 days.
Step 4
After a month, the wine vinegar will be ready for use. After using the next portion of vinegar, add wine to it, so your bottle will always be full.
