1. Pre-wash frozen squid with water. Then defrost at room temperature. Then remove the skin from the fillet. In order for the meat to retain its milky color, it should be treated with hot water (approximately 60 degrees). When using boiling water, the pigments from the skin will pass into the meat, it will turn purple.
2. The squid carcass must be slightly beaten off from both sides. Then the fillet will not shrink, will not become tough during cooking.
3. Boil, fry the squid for a minimum amount of time, up to a maximum of 5 minutes. Otherwise, they will lose their taste and valuable nutritional properties. A more acceptable option is to blanch for 3 minutes by ferry.
Squid is an excellent protein product, the basis of the first and second courses, it is perfectly combined with cereals and vegetables.
Stewed squid with vegetables
Prepare 500 grams of squid fillets appropriately (peel, beat off), cut into medium pieces. Add salt and pepper to taste, mix. Roll the pieces in flour, fry in sunflower oil until golden brown.
Grate two carrots on a medium grater. Cut two onions into half rings. Fry vegetables in a separate skillet.
Put seafood and vegetables in layers in a deep dish. Pour sour cream (200 grams). Put out for 10-15 minutes, covered with a lid.
Serve with a side dish or as a separate dish.
Squid cutlets
Grind 500 grams of squid fillet on a blender, after cleaning it.
Soak 50 grams of stale bread in milk, mince.
Chop two onions until smooth in a blender.
Put all the ingredients in one bowl, add the chicken egg, salt, pepper, mix.
Form cutlets, roll in breadcrumbs, fry on both sides in sunflower oil. Simmer for 5 minutes under the lid.
Serve with boiled rice or buckwheat, boiled potatoes are also great.
