Different types of cabbage soup are prepared using the same technology - meat is boiled (or its substitutes - mushrooms, fish), then sauerkraut is added to the broth (or its substitutes - brine, sorrel, green sour apples, salted mushrooms or sour cream). After the cabbage is cooked in the broth, salt and spicy dressing, potatoes are added to the soup. Ready-made cabbage soup is served with sour cream.

Recipe 1. Sour cabbage soup.

You will need:

500 gr beef

600 gr potatoes

300 gr sauerkraut

200 gr carrots

200 gr onion

salt, pepper, bay leaf.

Defrost the meat, rinse and cook over low heat for about 1, 5 hours. Remove the meat from the broth, cut it into small cubes and put it back into the broth. Grate the carrots and chop the onion. Fry the onions and carrots in a pan with the addition of vegetable oil. Cut the potatoes into cubes or strips.

Put sauerkraut in boiling broth. If the cabbage is too sour, it is recommended to rinse it with cold water first. After 10 minutes, pour the potatoes into the broth. Cook for another 7-10 minutes. Add roasted onions and carrots to the soup, season with salt and pepper to taste. You can put parsley root in the cabbage soup for a full taste. Cook for a couple more minutes, then remove the pan from heat. Serve cabbage soup with sour cream. Bon Appetit!

You will need:

250 gr sauerkraut

300 gr pork

4 potatoes

1 onion

1 carrot

150 gr mushrooms

salt pepper

Boil the pork until tender and, after cutting it into cubes, put it back into the broth. Boil the mushrooms separately until half cooked, drain the mushroom broth. Fry onions and grated carrots in vegetable oil. Put washed sauerkraut in boiling broth, cook for 10 minutes. Then add mushrooms and potatoes. Cook for another 10 minutes. Season the cabbage soup with fried vegetables, add salt and pepper to taste. After a couple of minutes, remove the pan from heat. Season the ready-made cabbage soup with sour cream and herbs before serving. Bon Appetit!
