If you purchased inshell nuts, peel them without damaging the kernels if possible. But you can fry already peeled kernels, almond flakes or nibs. It is possible to process nuts dry or in oil. The choice depends on your taste preferences, as well as how you intend to use the almonds in the future.

If you want to cook salty almonds or serve spiced nuts, sauté them in soybean oil, sunflower oil, or peanut oil. Pour it into a skillet and heat it up. Do not heat the oil too much - the kernels can crack, and besides, after being fried on the outside, they will remain moist inside.

Roast the nuts for 10-15 minutes, stirring continuously for even processing. If you want a darker kernel color and a more pronounced flavor, extend the processing to 20 minutes. Use a slotted spoon to remove the nuts and place them in a paper towel lined container to absorb excess oil. If you want, add finely ground salt or spices to the still uncooled nuts and mix thoroughly.
