Step 1
Thaw the wine gently at room temperature. Do not try to put the bottle in hot water - it can burst due to temperature changes. Do not shake or turn the bottle until the wine is completely thawed, then gently open. If the wine is not completely frozen and ice floes are floating in it, do not remove them, let them completely melt and dissolve. Wine strained from ice will be stronger, since the water contained in it will partially freeze, and the alcohol will remain; besides, his bouquet will be destroyed.
Step 2
After defrosting, a sediment may appear at the bottom of the bottle - this is the formation of tartar crystals. Do not shake it, but carefully drain and filter the drink without waiting for the precipitate to dissolve (this will happen if warming continues). If you do shake the bottle, it will have to settle for a day or two. The strained wine will be less acidic and will brighten slightly. Experts use cooling of wine to cleanse and clarify it, but at home you should not try to do this.
Step 3
How much the taste of wine changes after freezing depends on its type. Red will inevitably lose all its dignity, its taste will noticeably deteriorate. On the other hand, freezing often has a beneficial effect on white wine - it becomes softer, more harmonious, sweeter, the aroma intensifies and seems softer. Naturally, this is true if you purchased real wine - if you come across a fake product, it is impossible to predict the changes that will occur after freezing.
Step 4
When frozen, the wine expands a lot and can break the bottle or push the cork out and run out. Therefore, still try not to leave it in the cold for a long time, and if you need to chill a bottle of wine before serving, it is better to place it in a container with cold water or ice for an hour and a half.
