Pickled daikon is a delicious appetizer that will appeal to lovers of Japanese cuisine. You don't have to go to a restaurant to try it. Even a novice cook can cook this amazing dish.

- - 300 g daikon;
- - 1 tsp turmeric;
- - 1/2 tsp ground paprika;
- - 120 g granulated sugar;
- - a pod of red pepper;
- - a pinch of saffron.
Instructions
Step 1
Peel the daikon and carefully cut into thin slices. For convenience, you can use a vegetable cutter. If you don't have one, cut the daikon into strips.
Step 2
Transfer the prepared daikon to a deep bowl, salt and stir. Then put it in a colander and let it sit for an hour. During this time, all excess liquid will drain.
Step 3
Prepare the marinade. To do this, pour water into a small saucepan and place it on the stove. Add granulated sugar, saffron, turmeric and paprika. Stir the future marinade well and leave over low heat. When the liquid boils, pour in the vinegar. Wait a few more minutes and remove the pot from the stove. Strain the marinade through a fine sieve and cool to room temperature.
Step 4
Put the daikon on a table covered with paper towels, dry and put in a glass jar. Pour the finished marinade over it and stir thoroughly.
Step 5
Spicy food lovers can add a small piece of red pepper pod, cut into thin rings. Place the lid on the jar and refrigerate. Let the snack steep for 4-6 hours. After the specified time, you can serve the daikon as a snack. It goes well with fish and meat. You can store pickled daikon for 1.5 months.
