To prepare taramasalata, you will need: 2-3 slices of white bread or loaf; ½ glass of milk; 150 g smoked cod roe; 2 cloves of garlic; olives, lemon, vegetable oil according to your taste.

Peel off the crust from the loaf, cover with milk and leave to soften. Grind caviar and olives until smooth using a blender. Pass the garlic through a garlic press or grate on a fine grater and send to caviar and olives. A softened loaf should also follow. Mix all ingredients together with a blender and add olive oil to the mixture.

Bring the pate with a blender to a state of airiness and lightness. Then add lemon juice and mix everything thoroughly again. Your pate can now be spread over bread or toast.

Then sprinkle it with a mixture of cheese and thyme and season with salt. Roll the filling onto the layer with a rolling pin and cut it into thin strips. Roll the strips with a "string" or spiral, put on a baking sheet and put in the oven for 10-15 minutes until golden brown. Then turn each straw over to face the bottom and bake for another two to three minutes.
