The recipe for tomatoes marinated with carrot tops is called "Red Maidens" for a reason. Tomatoes small in size in a jar look actually ruddy and beautiful, they do not burst when poured. And the carrot tops on the bottom and sides add intrigue to the tasting. Having made such a preparation once, then many repeat the "encore" recipe for many years, praising the taste of friends and neighbors.
Why is this recipe so popular with housewives? It's all about the appearance of tomatoes and the way they are prepared, as well as the breathtaking taste. This option for home preservation has not yet become boring to households and guests, so in winter it will be greeted with a bang during a feast. By the way, carrot tops will replace all spices and seasonings, give tomatoes their barely perceptible aroma and add piquancy to ripe fruits.

Recipe for "Red Maidens"
I will say it is worth remembering the rule - it is better to taste these tomatoes a month after spinning (namely, this is how much it is recommended to insist the tomatoes under the lid, without opening). Perhaps after the first sampling, it will seem that they have made few stocks.
What you need to cook, not counting half-liter or liter cans and lids with a seaming machine:
- small dense tomatoes (you can select tomatoes no more than 5-ruble coins, and better - smaller);
- carrot tops freshly picked from the ridge.
How to marinate:
- Sterilize cleanly washed jars with steam or in the microwave, oven.
- At the bottom of each, lay about a quarter of the carrot tops, tightening them more tightly like a "nest".
- Gently, without squeezing, spread small tomatoes on top of the tops, fill the jars with them to the brim.
- Pour hot boiling water over, cover with lids, leave for 15 minutes. At this time, you can just have time to cook the marinade according to a simple recipe.
- The proportions for marnade pouring are simple: for 1.5 liters of water, 8 tablespoons of sugar with a small slide and 3 tablespoons of rock salt are required. You will also have to pour in 1 teaspoon of 70% vinegar essence after boiling.
- Before the marinade boils, you need to drain the slightly green water from the jars.
- Now, after waiting for the marinade to boil and pouring 70% vinegar into the sweet-salty liquid, you need to pour the tomatoes to the brim with this composition, immediately tighten the jars with lids.
That's all, the marinating process is complete, in time the whole procedure takes about an hour, including the preparation of cans and tomatoes. And the result is such "Red girls", as in the video below.
