Pickled miniature cherry tomatoes combined with an unusual dressing make an excellent appetizer for any table. The cherry pickling recipe does not require a lot of cooking time, but the tomatoes taste amazing.

It is necessary

  • - 500 g cherry tomatoes;
  • - 20 pieces of black pepper;
  • - 20 pieces of coriander;
  • - 2 cloves of garlic;
  • - greens (dill, cloves, horseradish, cherry or currant leaves) - to taste;
  • - bay leaf - to taste;
  • - 2 tablespoons of vinegar (9%);
  • - 2 tablespoons of sugar;
  • - 2 tablespoons of salt;
  • - 1 teaspoon of honey.

Instructions

Step 1

Choose beautiful and fresh cherry tomatoes without rot or bruising. Remove soft and crushed cherries. Separate the tomatoes from the stalks, rinse lightly in cold water and prick each tomato with a fork. It is necessary to pierce the tomatoes so that they do not crack during the pickling process.

Step 2

Transfer the tomatoes to a small saucepan or whatever container you use to marinate vegetables.

Step 3

Prepare the spices for the marinade: garlic, black pepper, coriander and herbs of your choice. Peel the garlic and grate 2 heads on a coarse grater. You should make about 2 tablespoons of grated garlic. Small umbrellas of dill, currant leaves, cherries, bay leaves, cloves, horseradish, etc. can be added to the marinade as herbs. Cherries are very tasty and have a wonderful aroma, and an unusual marinade will also give them a special note.

Add the prepared spices to the cherry tomatoes in the saucepan.

Pour boiling water into a separate bowl and dissolve 2 tablespoons of salt and granulated sugar. Pour boiling water over the tomatoes and spices and leave the marinade to cool completely naturally.

Step 6

After the marinade has cooled, drain it into a separate container. Bring the marinade to a boil and add 1 teaspoon of honey and 2 tablespoons of 9% vinegar, stir until the honey is completely dissolved. Vinegar should be added at the rate of: 2 tablespoons of 9% vinegar per 1 liter of liquid.

Step 7

Sterilize the tomato stacking jar. Arrange the cherry tomatoes beautifully in a jar. Fill the jar with tomatoes almost to the very top, leaving a little space for the herbs, fill with the marinade. Turn the jar of cherry over, wrap it up and leave to cool completely. Garlic chips will first be at the bottom of the jar, but after cooling completely they will rise to the top.

Step 8

Only after the jar of cherry has cooled completely, put it in the refrigerator for 1-2 days. In a few days, the cherry will be completely marinated.
