Bean soup is not only tasty and nutritious, but also very healthy, since the main component of our dish - beans - contains a large amount of protein, trace elements, vitamins and amino acids.
It is necessary
- - 2 tbsp. white beans
- - 4 small carrots
- - 2 onions
- - 1 stalk of celery
- - 1 tbsp. sunflower oil
- - 1 tbsp. tomato paste
- - parsley
- - black pepper, salt
Instructions
Step 1
Boil the beans. To do this, pre-soak the beans in raw water for 7-8 hours, and then drain and rinse several times with running water. Throw the cooked beans in a colander and transfer back to the saucepan.
Step 2
Peel and cut vegetables, onions into small cubes, carrots into thin strips. Rinse the celery thoroughly, chop it finely and sauté in a saucepan in vegetable oil, adding tomato paste. Wash greens (parsley, dill) and chop finely.
Step 3
Add carrots, onions, and tomato-sauteed celery to a pot of beans. If there is not enough liquid in the saucepan, add some water, it should cover the food slightly.
Step 4
Season with salt and pepper to taste, continuing to cook until the beans are cooked for another 50 minutes. Garnish with sprigs of herbs when serving.
