Fassolada is a popular delicious Greek soup. As in the case of our borscht, there are plenty of options for making this soup. We bring to your attention one of them - this soup is suitable even for fasting.
It is necessary
- - 400 g of white beans;
- - 100 g olives;
- - 3 onions;
- - 2 carrots;
- - 2 tomatoes;
- - 1 stalk of celery;
- - 2 liters of water;
- - 2 tbsp. tablespoons of olive oil;
- - 1 tsp black pepper;
- - salt.
Instructions
Step 1
Soak white beans in cold water overnight, rinse them in the morning, cover with cold water, cook for 15 minutes. Then drain the water completely, fill the beans with cold water again, cook until tender. The beans should be soft, but not mushy.
Step 2
Peel the carrots, cut into circles. Chop the celery and one onion too. You can use leeks instead of onions - they are more suitable for bean soup. Fry these vegetables in olive oil until soft, add mashed fresh tomatoes without the skin.
Step 3
Add fried vegetables to almost finished beans, add soup. Season with salt and pepper to taste.
Step 4
Separately cut the other two onions into half rings, pickle in any way you like. For example, in a mixture of vinegar, vegetable oil and spices.
Step 5
Let the soup steep for 20 minutes, serve hot. Serve pickled onions and olives separately with the fassolade.
