There are hundreds of recipes for making chicken soup. In Greece, it is customary to cook it with rice and serve it with sliced lemon.
It is necessary
- - 1 chicken
- - 3 onions
- - 100 g long grain rice
- - 1 cup olive oil
- - 1 lemon
- - salt
- - ground black pepper
Instructions
Step 1
Cut the chicken into portions with a kitchen knife. Wash thoroughly under running water. Pour cold water over the prepared chicken. Put the pot with chicken meat to simmer over high heat. After it boils, reduce the fire. Be sure to skim the broth.
Step 2
Peel the onions well and chop very finely.
Step 3
In boiling chicken broth, gently pour olive oil and chopped onion. Cook until the chicken is cooked, for a total of about an hour.
Step 4
Remove the chicken from the pan. Remove the skin and bones, chop the chicken meat coarsely.
Step 5
Pour long grain rice into the broth. Rice must first be washed. Cook until tender. Add chopped chicken to the soup. Add salt and pepper to your taste. Wash the lemon, scald with boiling water and cut into thin slices.
Step 6
Serve the soup hot. Serve sliced lemon separately on a plate.
