Zucchini pancakes with herbs can be served with various sauces, sour cream or mayonnaise. Thanks to the spices, the dish acquires a spicy taste.
It is necessary
- - 100 g flour
- - 2 small zucchini
- - vegetable oil
- - salt
- - ground black pepper
- - 2 eggs
- - dill greens
- - parsley
- - green onions
- - 3 cloves of garlic
Instructions
Step 1
Thoroughly chop all available greens with a knife. Grate the zucchini on a coarse grater. Be sure to drain the resulting liquid.
Step 2
In a separate bowl, combine beaten eggs, courgette mixture, flour, herbs, and minced garlic. Mix the resulting mass thoroughly, salt and pepper to taste. Knead the dough to the consistency of sour cream.
Step 3
Put the zucchini mixture in small slides in a hot frying pan, previously greased with vegetable oil. Press down lightly until they are flat and fry on both sides until golden brown.
Step 4
It is better to dry the finished pancakes slightly before serving to get rid of excess oil. To do this, it is enough to put them on a paper towel for a few minutes. You can serve any sauce or sour cream with zucchini pancakes.
