Zucchini cake is a very popular dish. It is better to cook it from young fruits with a thin skin. In this case, you can apply the vegetable directly with the skin without removing it.

This dish uses affordable and simple ingredients. A minimum of time is spent on it.

Zucchini cake is made using pancake flour, thanks to which the dough spreads well in the pan. The pancake should bake well on both sides, and for this you should pay attention to the proportions of the constituent components. After baking pancakes, it remains only to grease it with sour cream, sauce or mayonnaise, but it is better to prepare the sauce yourself.

To make a cake from zucchini you will need: 3 zucchini and 3 chicken eggs, 100 ml of milk, 2-3 tbsp. l. vegetable oil, about 250 g flour, 150 g hard cheese, 2-3 fresh tomatoes, salt to taste.

To lubricate the cakes, prepare the sauce: 100 g of sour cream and 100 g of mayonnaise or mayonnaise sauce, 1-2 cloves of garlic, 1 tbsp. l. chia seeds (if available), a bunch of dill greens. You can use tomato slices and parsley to decorate the cake.

Preparation

  1. Prepare everything you need according to the indicated list of ingredients. Wash the courgettes thoroughly. Trim the ponytails and grate on a medium grater. Squeeze the juice that the zucchini will release. Put the pulp in a deep, comfortable bowl.
  2. Drive the eggs into the resulting vegetable mass, mix well. Add chia seeds (if available), 2 tbsp. l. vegetable oil, milk and salt. Mix.
  3. Pour flour into the mass. Stir until smooth. The dough should not be liquid. If you get a lot of liquid, then add flour.
  4. Heat a pan for baking, grease it with vegetable oil and bake zucchini pancakes on both sides until golden brown. Do not use a pan with a very large diameter (14-18 cm).
  5. Prepare the sauce in advance: mix sour cream, mayonnaise, chopped dill and garlic (through a press). Grease the squash pancake with sauce. Put slices of tomatoes on the sauce and sprinkle them with grated cheese. Do this with all the pancakes.
  6. Decorate the finished cake with parsley, tomatoes, or whatever you like. The cake should be refrigerated for a while so that it can be conveniently cut into pieces later. A wonderful appetizer is ready.
