Summer is associated with outdoor trips and picnics. A rare picnic is complete without a barbecue. And the main condition for a delicious barbecue is properly marinated meat. But in order to understand which marinade to give personal preference, you need to try at least a few options.
Onion marinade
The onion marinade is probably the most popular and traditional marinade in existence. Good for lamb, beef, pork. Its composition is quite simple: meat, onions, and of course, pepper. The onion should be slightly more than half of the meat. For about 1 kilogram of meat - 700 grams of onions. Chop the onion to a mushy consistency. This can be done either with a blender or by grating it. The meat pieces must be mixed with onions and peppers and marinated for at least two to three hours. Before frying the kebab, the onion is removed.
Wine marinade
A good base for the marinade is wine. For beef, this is perhaps the most ideal option. In addition to one and a half kilograms of meat for this marinade, you will need 2 - 3 glasses of dry red wine, 3 onions, 2 tablespoons of lemon juice and ground black pepper, as well as 1 tablespoon of sugar. Since the beef needs to be marinated for a longer time, it is best to do this overnight. Mix the onion cut into half rings with the listed ingredients, add wine and leave in the refrigerator for 10 hours.
Kefir marinade
You can marinate any meat in this way, including chicken, and therefore kefir marinade is universal. The amount of onion, as well as the pickling time, is noticeably reduced with this method. For one and a half kilograms of any meat, you need to take a liter of kefir and a kilogram of onions. As a spice, you can use suneli hops, one tablespoon will be enough, plus 10 peppercorns. Diced onion should be mixed with seasonings, mixed with meat and pour over all this with kefir. Marinate for 2 hours.
Mustard honey marinade
Such a marinade is ideal for lamb meat, although beef and pork cannot be spoiled in this way. For one and a half kilograms of meat, you will need a tablespoon of honey and mustard, as well as a teaspoon of caraway seeds and ground pepper, add orange zest to taste. The peculiarity of this marinade is that you need to rub the meat with it immediately before cooking. It is better to beat off pork or beef for such a marinade.
Tomato Marinade
Tomato marinade is perfect not only for meat, but also for fish. For one and a half kilograms of meat or fish fillets, you will need a kilogram of tomato and a pound of onions, as well as a teaspoon of ground pepper and basil. Mix the tomatoes cut into halves or quarters with the onion and spices, cut into half rings. If you marinate meat in this way for 4 hours, then an hour will be enough for the fish.
To make the shish kebab juicier and more tender, it is necessary to salt it only before cooking. You can add any spices to your taste to any of the proposed marinades.
