Properly cooked pork liver is not only tasty, but also extremely healthy, because rich in vitamins and minerals necessary to maintain good human health. It can be used to prepare a lot of nutritious meals, incl. all kinds of cold snacks. Among their variety there is a recipe for pork liver salad with cabbage, which is liked even by the most capricious gourmets.
Pork liver salad with Chinese cabbage
Ingredients:
- pork liver - 600 g;
- Peking cabbage - 1 pc. (700-800 g);
- chicken egg - 6 pcs.;
- pickled cucumbers - 3 pcs.;
- hard cheese - 200 g;
- onion - 1 pc.;
- green onions - 1 bunch;
- mayonnaise;
- salt, ground black pepper.
Preparation
Rinse pork liver thoroughly and soak in cold milk for 40 minutes. The procedure is simple, but meanwhile the product will lose its bitterness and will be more tender. After the liver has been in milk, rinse it under the tap, put it in a saucepan, fill it with water, salt and cook for 20-30 minutes. Then remove, let cool slightly and free from films.
Cut the prepared pork liver into large enough cubes or cubes so that it can be seen in the finished salad that it is she who is the main ingredient. Then fry the liver in a skillet in vegetable oil over high heat until well done.
While the pork liver is soaked in milk, boiled, cooled and fried, work on other ingredients. Boil hard boiled eggs. To do this, let them boil over medium heat for 10-12 minutes, then fill them with cold water, in the future they will be easier to clean. When the eggs are cool, peel and chop them.
Cut the pickled cucumbers and cheese into small cubes. Wash Chinese cabbage and cut into strips. Peel the onions, cut into thin half rings, fill with boiling water, hold for 5-10 minutes and immerse in cold water for a few seconds. This is done to remove the bitterness from the onion. Rinse green onions under running water and chop.
Now combine all the ingredients, salt to taste, season with mayonnaise, mix, transfer to a beautiful dish and decorate with chopped herbs.
Pork liver salad with white cabbage
You will need the same ingredients as when preparing the salad according to the previous recipe, but instead of Peking cabbage, take white cabbage. One small dense fork (600-700 g) will be enough. There are two options for preparing cabbage.
First option. Chop the cabbage finely into strips, put it in a bowl, lightly salt, pepper and remember with a crush or hands until juice appears. Let it sit for a while (10-15 minutes) and mix with the other ingredients.
Second option. Chop the white cabbage into long thin strips, transfer to a colander and pour over with boiling water. It will become softer and softer. Let it cool and combine with other ingredients.
