Fried potatoes are loved by many. This is a great side dish for meat and fish, but it can become a main dish if cooked with lard and served with a salad of fresh vegetables, pickled or pickled mushrooms. It will take very little time to cook fried potatoes with lard.

Step 1
Cut off the skin from the bacon, it is often rough, and after frying it becomes tough and spoils the taste of the dish. Then cut the bacon into cubes about a centimeter thick.

Wash and peel the potatoes well, be sure to pick the eyes out of them. Then rinse again and place in a bowl of cold water to keep the tubers from darkening.
Step 3
Put the pan on high heat, heat it and put pieces of bacon on it to melt. It will take some time.
Step 4
Cut the potatoes into slices or cubes, rinse and lay out on a towel or napkin and dry well.
Step 5
After some of the bacon has melted, place the chopped and dried potatoes in the pan. Spread it evenly over the pan. Do not cover the pan with a lid to create a crispy crust.

Peel and finely chop the onions.
Step 7
After about ten minutes, as soon as a ruddy, strong crust forms on the bottom layer of the potatoes, gently stir the potatoes and reduce the heat to medium.
Step 8
After about five minutes, add the onion to the potatoes, salt and mix everything thoroughly. Cover the pan and fry until tender, stirring occasionally.
Step 9
When serving, you can sprinkle fried potatoes with finely chopped herbs: dill and parsley.

Boiled potatoes can also be cooked in this way. Fry the peeled and chopped onions with lard. Cut the boiled potatoes without the peel into slices, put in a thin layer in a pan with partially melted lard, salt and fry, stirring, over high heat for 5-10 minutes until a crust forms.
Step 11
Fried potatoes with bacon and mushrooms. Remove the skin from the bacon and cut it into small pieces.

Peel and finely chop the onions.
Step 13
Put pieces of bacon and onions in a well-heated skillet. Fry them together, stirring occasionally, until the bacon is melted and cracklings are made.
Step 14
Use a slotted spoon or a special spoon with holes to catch the greaves and onions from the pan.
Step 15
Wash potatoes, peel, cut into cubes or sticks, rinse again and dry on a towel.
Step 16
Wash the mushrooms well and cut them into slices. Then pour the vegetable oil into another pan, heat it over medium heat, put the prepared mushrooms and fry them, stirring occasionally.
Step 17
Put chopped and dried potatoes in a frying pan with melted lard and fry. Do not forget to stir the potatoes periodically.
Step 18
When the potatoes are fried, transfer the greaves, onions and mushrooms to the pan. Salt and pepper everything, add a little sour cream and mix. Cover the pan with a lid and let the potatoes with mushrooms and cracklings simmer over low heat for another five minutes
