Sauce for meat cutlets
Since meat patties are quite dry after frying, it is best to serve sauces with them. Tomato sauce, which can be based on tomatoes or tomato paste, will ideally emphasize the taste of meat. To prepare it, it is enough to fry a tablespoon of flour in butter until golden brown, add to it the required amount of tomato paste, about 100 ml of meat broth. Separately, fry the onion, carrots, and then mix everything with the sauce. In this case, salt and pepper are added to taste at the very end of cooking.
Garlic, basil, bell peppers, chili, parsley - all of these ingredients can be added to tomato sauce for meat patties. Some housewives even pour fried cutlets with this sauce, and then stew them under a closed lid for several minutes. Meat cutlets prepared in this way will never seem dry.
Various sauces for cutlets
Since fish cakes are more tender in consistency, they will go well with creamy sauces. Very quickly, you can prepare the classic "Bechamel", which is popular with many. For him you will need:
- 3-5 tbsp. tablespoons of flour;
- 1 onion;
- 3-4 tbsp. tablespoons of butter;
- 1 glass of milk or sour cream;
- 5, 5 cups of meat broth;
- salt and pepper to taste.
First, in a frying pan, you need to heat the butter, add flour to it and fry it until golden brown. The onion must be finely chopped, fried a little and combined with flour, broth, milk or sour cream. Salt and spices are added to taste and the sauce should be brought to a boil over very low heat.
When there is no time at all, it will be enough to mix sour cream, lemon juice, your favorite herbs and salt. The resulting sauce can be poured over any cutlets, thereby giving a new taste to a completely familiar dish.
If you want something spicier or more savory, you can make a sour cream-based garlic sauce. From the ingredients you will need:
- 250 g sour cream or cream;
- 3 garlic cloves;
- salt, parsley, dill, cilantro.
Greens and garlic must be finely chopped and mixed with sour cream, salt. This sauce prepares in minutes and is suitable for mushroom, potato and vegetable cutlets.
